It maybe quite difficult to get this in restaurants as many restaurants do not serve this dish. I am not sure of the reason but I guess that this dish is not common or popular. Anyway, I loved this dish and thus I cooked myself salted fish pork belly (home cooked style) for dinner with my family.
Ingredients:
- pork belly.
- salted fish.
- onion (big ones).
- ginger.
- garlic.
- dry chili.
- spring onion or scallion.
- white soy sauce.
- black soy sauce.
- abalone sauce.
- oyster sauce.
- black vinegar.
- black pepper.
- white pepper.
- corn flour.
- sugar.
- salt (pinch of salt).
- Chinese wine.
- water.
Marinate
- slice pork belly.
- white soy sauce.
- black vinegar.
- abalone sauce.
- oyster sauce.
- pinch of salt.
- black pepper.
- 2 slices of ginger.
- corn flour.
- mixed well and refrigerate for 1 hour.
Cooking Salted Fish
- heat oil in pan.
- add garlic.
- add salted fish.
- stir fry till fragrant.
- keep aside.
- leave oil in pan for next step cooking.
Next Step Cooking
- heat up the same oil in pan again.
- add garlic.
- add dry chili.
- add ginger (slice).
- add onions (strips).
- stir fry till fragrant.
- add pork belly.
- add spring onion.
- add black soy sauce (for colouring).
- stir fry till pork is cooked.
- add water (till cover all ingredients including the pork).
- add corn flour (1st dilute corn flour in water).
- add white pepper.
- add sugar (small tea spoon, not too sweet).
- stir and simmer for 5 mins (low heat).
- add salted fish.
- stir and simmer again for 5 to 10 mins (low heat).
- observe water level so it doesn’t overcooked.
Serve this dish with rice and while it is hot.
